As other people have correctly pointed out, the typical ceseo of Spaniards is not encountered in Latin American countries
Colombians speak very clearly, in a harmonious way, with a delightful accent.
The Caribbean countries are perhaps the most famous for their fast talking.
I am Cuban, very proud of my people but even I have to tell some of my friends to speak slower at times. It seems like we Cannot wait to end a word to start the next one. We omit r’s and s’ at the end of a word all the time. We hardly breath when we speak.. It seems like there’s always much to talk about and not enough time. Nevertheless, speaking at slow rate, enunciating words correctly and using perfect grammar and vocabulary have much to do with one’s education and refinement.
By nature, women tend to speak more softly than men. When you are exposed to intensive reading and plenty of classic books since infancy your vocabulary is broader and more sophisticated.
In reality, generalizations are just that. Each person is unique and depending on education, environment, and upbringing their speech will be flawless, with an ample vocabulary and attention to grammar and enunciation.
In general, I can vouch for Cubans, most of us are loud, very loud, speak at a million words per minute and laugh heartedly. It is just the way we are. However, you would find fast and slow speakers in every Hispanic country.
To be on the safe side, start with Colombian Spanish, just in case.
